Title: White Bean And Kale Soup

1 md Red onion (188 g); diced
4 Celery ribs; diced
1 lg Carrot (226 g); diced
5 cl Garlic (12 g); minced
14 oz Can diced tomatoes (400 g)
Salt & pepper; to taste
1 tb Italian seasoning -OR-
1 ts Dried oregano
30 oz Cannellini beans (2 cans)
4 c Vegetable broth (960 ml)
2 c Kale (130 g);
- finely chopped
2 Limes (1 to 2 tb); juice of
Preparation time: 15 minutes
Cooking time: 3 minutes
This White Bean and Kale Soup is made in the slow cooker so it's super
easy! Hearty greens and beans make it satisfying and flavourful.
Turn your slow cooker on and to warm.
Add all of the ingredients into the slow cooker except the kale and
the lime. Stir to combine.
Set the slow cooker to high for 3 hours or on low for 6 hours. For
high, monitor the last 30 minutes and for low, monitor the last hour.
At the end, stir in the kale and the lime juice and let it cook for
about 5 more minutes.
Serve with crusty bread on the side and enjoy!
