3 c Okra; chopped 1/2"
1/2 c Tomatoes; chopped
1 Onion; chopped
1/2 c Fresh ginger; grated
1/2 ts Salt
3 tb Oil
1 tb Cilantro; chopped
Heat oil in a wok and saute onion lightly. Add ginger and saute for
a minute. Add okra pods and salt and stir for another 5 minutes. Then
add chopped tomatoes and keep stirring until all ingredients are well
mixed and cooked. Garnish with cilantro leaves and serve.
