Title: Sakkarai Pongal (Sweet Rice Jaffna Style)

2 c Rice
Raisins
2 tb Mung beans
Cardamom powder
1 c Brown sugar
1/2 Coconut; grated
Cashews
1 tb Ghee
Roast mung beans in a dry skillet. Boil the rice and beans in 5 cups
water for 30 minutes. Add the sweetening and coconut and stir well.
Reduce heat and simmer for 10 minutes. Fry the raisins and nuts in
ghee until nuts are brown and add to the rice with the cardamom
powder. Stir well and remove from fire.
