Title: Scrambled Egg Curry

Yield: 2 Servings
1 lg Onion (2 to 3 sm);
- chopped into small pieces
2 c Tomatoes; chopped
2 cl Garlic; ground into paste
Fresh ginger (1");
- ground into paste
1 Green chiles;
- up to 2, chopped
4 Eggs
1 ts Garam masala
1 ts Salt
1/2 ts Turmeric
1/2 ts Cumin
1/2 ts Coriander powder
1 tb Oil
Fry onions in oil until soft.
Add garlic and ginger paste and keep frying briefly. Add green chiles,
tomatoes, and all spices.
Simmer on medium heat for 10 to 15 minutes with closed lid.
Remove lid and keep simmering until excess water has evaporated.
Mix eggs together in bowl and add to pot.
Keep cooking/frying until eggs are well done. The mixture should be
fairly dry)
Serve with chapatis.
