Title: Miss Pearl's Tomato Papaya Macadamia Nut Salsa
Categories: Salsa, Fruits, Nuts
Yield: 4 Cups
6 Tomatoes;
- blanched, peeled, seeded,
- and chopped
1 Papaya;
- peeled, seeded & diced
1/2 Red onion; diced
1/4 c Macadamia nuts;
- toasted & chopped
2 tb Mint; chopped
1 tb Cilantro; chopped
1/4 c Fresh lime juice
1/4 c Olive oil
Salt & pepper
Combine all ingredients, and adjust seasonings to taste. Best
served with grilled fish or chicken.
