Title: Pumpkin Pie Pancakes

1 1/2 c All-purpose flour
3 tb Natural sugar
1 tb Baking powder
1 ts Pumpkin pie spice
1/2 ts Salt
1 1/4 c Nondairy milk
1/3 c Canned pumpkin;
- solid-pack or puree
1 tb Neutral vegetable oil
In a large bowl, combine the flour, sugar, baking powder, pumpkin pie
spice, and salt, and set aside.
In a food processor or blender, combine the nondairy milk, pumpkin
puree, and oil, and process until well blended. Pour the wet
ingredients into the dry ingredients, mixing with a few swift strokes
until just combined.
Preheat the oven to 200?F. Heat a lightly oiled griddle or large
nonstick skillet over medium heat. Ladle about 3 tb batter onto the
hot griddle. Cook on one side until small bubbles appear on top,
about 2 minutes. Flip the pancakes with a metal spatula and cook
until the other side is lightly browned, about 1 minute more. Keep
the cooked pancakes warm in the oven while you prepare the remaining
pancakes.
