Spiced Banana Pancakes

Title: Spiced Banana Pancakes

Yield: 4 Servings
1 1/2 c All-purpose flour
3 tb Natural sugar
2 ts Baking powder
1/4 ts Salt; or to taste
1/4 ts Ground cinnamon
1 pn Ground allspice
1 pn Ground nutmeg
1 3/4 c Nondairy milk
3 md Ripe bananas; peeled, sliced
In a large bowl, combine the flour, sugar, baking powder, salt,
cinnamon, allspice, and nutmeg, and set aside.
In a food processor or blender, combine the milk and half of the
bananas and process until smooth. Pour the wet ingredients into the
dry ingredients, mixing with a few swift strokes until just combined.
Fold in the remaining bananas.
Preheat the oven to 200?F. Heat a lightly oiled griddle or large
nonstick skillet over medium heat. Ladle about 1/3 cup batter onto
the hot griddle. Cook on one side until small bubbles appear on top,
about 2 minutes. Flip the pancake with a metal spatula and cook until
the other side is lightly browned, about 1 minute more. Keep te
cooked pancakes warm in the oven while you prepare the remaining
pancakes.
