Comme toi, je rêve d'avoir un port qui me permettrait de facilement
et rapidement changer mon NVMe. Ceux qui aiment tester Linux mais ne
veulent pas faire de dual-boot aimeraient pouvoir tout simplement
changer le NVMe.

I don't use one.
The M58p doesn't have a UEFI BIOS, so F12, select the eSATA device.
If you want a more modern experience, use a Lenovo M700. It has both
Legacy and UEFI with eSATA support. Again, F12, select boot device.
The M700 is configured for UEFI boot and runs any EUFI OS, currently
W11, Linux, ESXi, etc.

Lenovo makes a pretty solid product and they rank third in the US market. They also sell a lot of rebranded products from Dot Hill, LSI / NetApp, Brocade, Quanta, IBM Storwize / Spectrum, SuperMicro and others.
Hitachi will never admit it, but they sold a rebranded Lenovo blade system until they came up with their own. Pictures and part numbers don't lie.

I don't know what you meant by an NVMe enclosure. I have one with a
cable ending at a USB-A plug. I used it as a backup before removing the
guts of my HTPC and rebuilding it.
